MASTER OF SCIENCE IN NATURAL PRODUCTS AND FOODS
Candidates should have a good knowledge of mathematics (algebra, arithmetic and trigonometry functions), general chemistry, organic chemistry, general concepts of biochemistry and physics, basic laboratory skills, and a good reading comprehension of academic English.
In addition, applicants for this degree courseshould possess the following skills:
- Ability to observe, abstract, analyze and synthesize
- Ability to think and conduct in the laboratory using the scientific method
- Ability to work collaboratively as part of a team and incorporate new ideas in the analysis of problems before making decisions
- Ability to work effectively under pressure
The graduate of the Master of Science in Natural Products and Foodscourse will be able to conduct independent research, teach at both undergraduate and graduate academiclevels, provide high quality consultancyin the area of foods and natural products chemistry, provide specific solutions to concrete problems by means of a professional final project, and have the ability to pursuea Ph.D. degree.
The general objective of the M.Sc. programme is to form specialists in the areas of chemistry, biochemistry, food engineering, food technologies, and nutrition. Students will have the opportunity to develop skills for thecharacterization of active principles, identification of trace contamination, evaluation of the functional properties of foods, and developingcommercial processes to obtain food with potential benefits for the health of consumers. The general objective of the M.Sc. programme is to provide the students with a strong background in the areas of chemistry, biochemistry, food engineering, food technologies and nutrition.

Dra. Norma Francenia Santos Sánchez

Dr. Santos obtained her undergraduate degree in Biological and Pharmaceutical Chemistry at the University of Veracruz, Xalapa. Work on her thesis "Total Synthesis of the isomeric furanocoumarins ()-2,3-dihydro-2-(1 ', 2'-dihydroxy-1'-methylethyl) -7H-furo [3,2-g] [1] benzopyran-7-ones ", was carried out at the Institute of Basic Scienceat the University of Veracruzin 1996, under the direction of Dr. Ricardo Miranda Tovar. She received her Doctorate in Organic Chemistry at the Chemistry Department of CINVESTAV-IPN in 2003, with the doctoral thesis: "Synthesis and Conformational Analysis of Alkaloids of Physostigmines", under the direction Dr. Sonia Martha Morales-Rios.
Since 2003 she has been a research professor at the Agro-industrial Institute of the Technological University of the Mixteca.Her research areas involve the assessment, isolation and characterization of antioxidants from fruits and plant extracts. The plant material under study is indigenous to Oaxaca and Mexico and contributes to the chemical and functional knowledge of biodiversity. Another field of knowledge that she has developed has been the organic synthesis of heterocyclic compounds derived from quinoxalines, organic molecules with potential antioxidant and antimicrobial activity. Her synthesis proposal for obtaining these compounds is novel and versatile. Quantification of the antioxidant properties of the isolated metabolites, extracts or synthetic products of spectroscopic methods has been carried out. The employed methods are DPPH radical, ABTS, FRAP, and chelation.
Dr. Raúl Salas Coronado

Dr. Salas received his first degree in Chemical Engineering from the University of Veracruz, Poza Rica / Tuxpan. He holds a Ph.D. in Chemistry awarded by the Center for Research and Advanced Studies of IPN (CINVESTAV-Mexico). Since 2003 he has been Research Professor attached to the Agro-industrial Institute of the Technological University of the Mixteca. Dr. Salas has taught Physical Chemistry, Instrumental Analysis, Analytical Chemistry and the Thesis Seminar to undergraduates in Food Science as well as Quantitative Chemical Analysis and Modern Instrumental Methods in the Master of Science Program in Natural Food Products. Between 2004 and 2008 he was director of the Agro-Industrial Institute. From 2009 until 2013 he was the coordinator of the Master's Program in Natural Products and Food. From 2007 to 2011 he was also leader of the Chemical-Biology research group, which is currently in consolidation. His research is related to the study of natural products in plants and foods and evaluation of the effect of thermal processing on the composition of pigments and antioxidants in foods. He has supervised six undergraduate theses and is currently supervising two master's theses. He is a reviewer for the journals Food Research International y de Journal of Mexican Chemical Society. Dr. Salas is a member of the national scientific registry (CONACYT) of accredited evaluators in the field of Biology and Chemistry. He has attained the honor of Level 1 National Researcher awarded by the National System of Researchers (SNI) and a Distinction Profile awarded by the Secretariat of Education. He has been Academic Vice-Rector of the Technological University of the Mixteca since 2013.
Dr. Rogelio Valadez Blanco

Dr. Valadez obtained a bachelor’s degree in Food Science at the Unidad Profesional Interdisciplinaria de Biotecnología at the Instituto Politécnico Nacional (IPN) where he graduated with honours in 2000. In 2003 he earned a master’s degree in Chemical Engineering and Applied Chemistry at the University of Toronto in Canada, under the direction of Dr.Levente Diosady. His master’s thesis, "In-line ColorMonitoringduring the Food Extrusion Process Using a CCD Spectrometer", was later published as a scientific article. In 2008 he earned his doctorate at Imperial College London (England) in the Department of Chemical Engineering, under the guidance of Dr. Andrew Livingston. His doctoral thesis was "Membrane Reactors for the Enantioselective Production of Organic Chiral Compounds Using Nanofiltration Membranes" and produced five scientific articles in international journals. Since 2009 he has been working at the Universidad Tecnológica de la Mixteca(UTM) in Huajuapan de León, Oaxaca, as a research professor in the BSc in Food Engineeringprogram. He participated in the creation of the MScin Natural Products and Foods program at UTM and is part of the Basic Academic Groupof the same program. Dr. Valadez is currently head of the BSc in Food Engineeringprogram. He holds a Promep profile and is the coordinator of the Bio-chemical Sciences academic group, UTMIX-CA-21. He has supervised four theses at the undergraduate level and one M.Scthesis. His current research focuses on the production and testing of biofertilizers on corn and tomato crops. He is also directing a research project on the microbiological and functional improvement of pulque in collaboration with Dr. Thomas Montville (RutgersUniversity, New Jersey) and Dr. Adelfo Escalante (IBT-UNAM). In addition,he is developing a project for the separation of flavonoids from plants and foodsextracts using nanofiltration membranes in collaboration with the CA-21group. Dr. Valadez is currently coordinating the project Research Networks of CAs of PROMEP: "The Development of an Integral System for the Cultivation of Tomatoes Employing Sustainable Methods", in which natural extracts and beneficial microorganisms are used for the control of phytopathogenicfungi in tomato crops.
Dra. Mirna Patricia Santiago Gómez

Dr. Santiago is a Chemical Engineer with a speciality in Food Science. She graduated from the Instituto Tecnológico de Oaxaca where she also earned her master’s degree in Biochemical Engineering. She obtained a doctorate in Food Science at the University of Bourgogne in Dijon, France. Currently she is a Research Professor of the Agro-industrial Institute at the Universidad Tecnológica de la Mixteca (UTM). Dr. Santiago is a visiting professor of the Interdisciplinary Research Centre for Integral Regional Development – Oaxaca Unit, which forms part of the Instituto Politécnico Nacional (IPN). She holds a Promep profile. She has been recognized by the National System of Researchers (SNI) at Level I. She has published six articles in international magazines and has trained personnel. She has also edited articles and evaluated projects which have been submitted to Conacyt. She is the coordinator of a research group called The Science and Technology of Food which undertakes research in food science and technology. She teaches her speciality in the BSc Food Science program and the MSc Natural Products and Food program. She is currently carrying out the following lines of research: The hydroperoxidelyase enzyme: extraction, purification, characterisation and use in the production of food aromas (aldehydes); The identification and transfer of small volatile migrant molecules of Braheadulcis in a model food system: a contribution to the assessment of the genuine cheeses of Mexico; The microbiological evaluation of agave inulin and the determination of the shelf life of prebiotic drinks.
Dra. Paula Cecilia Guadarrama Mendoza

Dra. Paula Cecilia Guadarrama Mendoza was born in Mexico City on 10 October 1972. She received her basic education at the Liceo Mexicano Japonés. In 1991 she entered the Food Studies Program in the Chemistry Department at UNAM. She completed her degree in 1997 with the thesis entitled "Estudio de factibilidad técnica para la obtención de pigmentos a partir de cefalotórax de camarón" ("A Study of the Technical Feasibility of Pigment Extraction from the Cephalothorox of Shrimp") under the direction of Dr. María Del Carmen Durán Domínguez. In 1997 she began work on her Master’s Degree in Food Science and Technology at the UAQ, completing the degree in October 1999 with the work "Estudio de la principal proteasadigestiva de Prostephanustruncatus (Horn)" ("A Study of the Main Digestive Protease of Prostephanustruncatus (Horn)")under the direction of Dr. Alejandro Blanco Labra of the CINVESTAV-Irapuato. Subsequently in 2000 she entered the Universidad Tecnológica de la Mixteca (UTM) as research professor in the Agro-Industrial Institute, where she continues working at present. Over the course of the past years she has given various courses related to the areas of Food Chemistry, Microbiology, Biochemistry and Sensory Evaluation of Food, helping also in the Food Engineering program. She has given training courses and workshops in the area of Food Chemistry and Preparation directed respectivelyat professors and those managers for the social program Albergues Escolares for indigenous people. She has participated in various national and international conferences. In 2013 she obtained the degree of Doctor in Sciences of Bioprocesses with the work "Productividad y caracterización de cepasparentales e híbridas provenientes de neohaplontes compatibles de Pleurotus spp. de la región mixteca" ("Productivity and Characterization of Related Families and Hybrids of Compatible Neohaplonts of the Pleurotus spp. from the Mixtec Region") under the direction of the Dr. Gustavo Valencia del Toro of the UPIBI-IPN. She has directed theses and published articles related to the area of food biotechnology. Currently she is developing projects related to the characterization of fungal families with dietary, functional, medicinal, or bio-remedial potential.
Dra. Edith Graciela González Mondragón

Dr. Edith Graciela González Mondragónhas a Doctorate in Chemical Sciences from the UAM-UnidadIztapalapa in the area of Protein Biophysical Chemistry. She obtained a postdoctoral fellowship of three years in the Medical Program at UNAM in the Department of Microbiology and Parasitology in the Laboratory of Parasitical Molecular Biology. Her research includes: 1) Structural characterization of the stability and catalytics of recombinable enzymes, 2) Application of agro-industrial plants and waste for the extraction and characterization of compounds such as flavonoids, 3) Extraction of polyphenol cyclodextrin compounds for possible application in the production of functional dietary substances, 4) Study of alternative sources of starch for the enzymatic synthesis of cyclodextrin, and 5) Isolation of micro-organisms with cyclodextringlycosyltransferase (CGTase) or feruloylesterase (FE) activity. She won the Twentieth Annual Research Award Competition in 2011 in the Area of Basic Sciences and Engineering through UAM with her work entitled Binding Thermodynamics of phosphorylated inhibitors to triosephosphateisomerase and the contribution of electrostatic interactions. She also has an award in the category of Technological Research in the State Awards of 2011, through the Science and Technology Board of Quintana Roo - State Government of Quintana Roo.
Dra. Beatriz Hernández Carlos

Beatriz Hernandez Carlos is a graduate of the Nacional School of Biological Sciences of the Instituto Politécnico Nacional with a major in Industrial Pharmaceutical Chemistry (1987) and a Master’s Degree in Bio-organic Chemistry (2005).
She obtained her Doctorate in Chemical Sciences from the Chemistry Department of the National Autonomous University of Mexico in 2000.
She worked in the pharmaceutical industry as an Analytical Chemist from 1989 to 1992, as Head of Quality Control (1992-1993) and as Head of New Product Development (2000).
She was an associate professor in the Interdisciplinary Biotechnology Professional Unit, IPN, Mexico City (1993-2002) and a research professor at the Resource Institute at the University of the Sea, Oaxaca (2002-2013). She is currently a research professor at the Universidad Tecnológica de la Mixteca (UTM) since September of 2013.
Dr. Hernandez’s research areas are: 1) the identification of vegetable species in the southern mountains and coastal areas of the state of Oaxaca with potential applications in medical science, food science and environmental science, and 2) the isolation, structural elucidation and biological evaluation of natural products with polar properties (glycosides).
She has directed five undergraduate theses and four master’s theses. She has published 17 articles in indexed periodicals and four book chapters, and she has presented 26 papers at professional conferences. She is a member of the National Researchers’ System Level I (2005-2015) and the recipient of the 2013 State Prize in Science, Technology and Innovation in the area of Biological Sciences awarded by the Oaxacan Council of Science and Technology.

Actualmente realiza una estancia Posdoctoral dentro del cuerpo académico Ciencias Químico-Biológicas en colaboración con la Dra. Beatriz Hernández Carlos, en química de productos naturales, en el proyecto de investigación: Obtención de compuestos a partir de dos especies vegetales con potencial biológico. El presente proyecto se desarrolla con el propósito de aportar datos nuevos al conocimiento científico de la flora autóctona del estado de Oaxaca, planteándose como objetivo general, obtener los componentes químicos principales de las plantas Alloispermum integrifolium y Prostechea varicosa, especies a las que se les reconoce popularmente como plantas medicinales. Actualmente cuenta con tres publicaciones en revistas indizadas. La Dra. Villanueva-Cañongo ha impartido el curso práctico de aplicación de la cromatografía de líquidos en el estudio de los Productos Naturales, así como la materia de Procesado de Alimentos en la Maestría en Ciencias: Productos Naturales y Alimentos.
1. Characterization, production, measuring and monitoring secondary metabolites
In this area, projects are developed related to the extraction, separation, and identification of chemical compounds with bioactivity. General extraction methods are used such as liquid-liquid or solid-liquid extraction. Some of the extraction techniques used imply maceration, Soxhlet extraction, extraction assisted by microwaves or ultrasound, as well as solid-phase microextraction. For separation, ultra and nano membrane filtration methods are used, as well as chromatographic methods of liquids or gases with simple detection. The filtration membranes are used to refine the extracts prior to using the chromatographic techniques. For high-performance liquid chromatography, UV/Visible, refractive index and fluorescent detectors are used. For gas chromatography (GC) flame ionization detectors (FID) and electron capture detectors are routinely used. Identification is done by low- and high-resolution mass spectrometry, infrared spectroscopy (IR), one- and two-dimensional 1H y 13C nuclear magnetic resonance (NMR), and even x-ray diffraction. For quantifying the chemical compounds of interest, the GC-EM-EM and HPLC hyphenated technique with the aformentioned detectors are used. Additionally, organic syntheses for obtaining compounds with bioactivity are carried out, as well as the development and implementation of enzymatic and fermentative methods for the production and monitoring of products of interest.
2. Engineering of Sustainable Biotechnological Processes
This aims to develop projects that could potentially be used in the food and pharmeceutical industries. It is related to the development of biotechnological processes to reduce the level of organic contaminants from agro-industrial liquid waste, involving physico-chemical and/or biological treatment. Among the physico-chemical treatments is ozonation, while the biological treatments can be aerobic, anaerobic or facultative. These processes are oriented chiefly toward the generation of products of commercial interest, for example: biomass, biogas, probiotics derived from agave and phenolic compounds. The latter are of particular interest, due to the fact that they have a high added value due to their antioxidant activity, which is associated with the prevention of cancer and cardiovascular and neurodegenerative conditions. This line is also associated with the enzymatic production of scents derived from aldehyde and esters.

El proceso de admisión
Para la admisión de los alumnos al posgrado MCPNyAl se realiza la secuencia siguiente:
- Presentación de un examen de conocimientos para su ingreso al propedéutico. Este examen comprende las materias de Bioquímica, Química de alimentos, Matemáticas, y Química Orgánica (se adjunta guía de estudios).
- Entrevista por parte del comité de admisión, formado por tres miembros del núcleo académico básico (NAB). Donde se evalúan cuatro aspectos: a) Trayectoria académica/profesional y metas profesionales; b) Capacidades personales y habilidades de trabajo experimental; c) Actitudes para trabajo de investigación y estudios de posgrado; y d) Intenciones de inversión de tiempo en el programa de maestría. Se adjunta formato de entrevista. Se publican las fechas para la presentación de exámenes y entrevista.
- Con base en los resultados del examen de conocimientos y la entrevista se seleccionan los alumnos que participarán en el propedéutico, el resultado se les hace llegar por escrito desde la División de Estudios de Posgrado. En el curso propedéutico se estudian las materias Bioquímica, Química de Alimentos, Matemáticas, y Química Orgánica. Este curso propedéutico es de ocho semanas y se imparte por profesores del NAB, y se evalúan los conocimientos al final de los cursos. El profesor encargado de la materia imparte cursos, analizan artículos científicos relacionados con el tema, según sea el caso. En algunas ocasiones los alumnos llegan a presentar algún tema. Durante este curso propedéutico se realizan exámenes parciales, para un monitoreo del avance académico de los alumnos. Y al final del curso propedéutico se aplica el examen final que permitirá la selección definitiva de los alumnos al programa de posgrado. Esta selección es realizada por el comité de admisión del núcleo académico básico y se analizan los resultados de los exámenes finales las materias y su entrevista. Se redacta un acta de admisión que se hace llegar a la División de Estudios de Posgrado.
- A los alumnos admitidos se les comunica por escrito el dictamen de admisión, oficio que firma el jefe de la División de Estudios de Posgrado.
